Our Chef
Casa Bonavita's Kitchen is led by Executive Chef Dex Oseman. His cooking is instinctive, ingredient-focused, and rooted in the generous spirit of Mediterranean home cooking. Trained at The River Café, Dex's cooking celebrates exceptional produce through simple, unfussy dishes full of flavour and warmth. Inspired by Malta’s sea, gardens, and slower rhythm of life, the menu draws on seasonal ingredients, classical European technique, and a deep respect for quality. Guests are encouraged to linger over long lunches, good wine, and relaxed dinners that stretch late into the evening — one of the great pleasures of Mediterranean living.

The Valletta Bar
The Valletta Bar is wrapped in hand-painted wallpaper by De Gournay and held in a low, intimate light. Evenings gather slowly here over classic cocktails, quiet conversation, and the easy drift into late hours, creating a space that feels at once discreet, atmospheric, and gently alive after dark.
